Fall Spiced Apple Crisp

This easy as apple pie crisp is ubiquitous with fall, full of warming aromas and a brown sugar spiced crunch. Serve a la mode while the crisp is still warm and fully embrace the change from summer to fall.

Fall Spiced Apple Crisp

Ingredients

  • 1/2 cup rolled oats
  • 1/2 cup flour
  • 2 tbsp flour separate
  • 6 tbsp butter 3/4 stick
  • 1/4 tsp salt
  • dash baking soda
  • approx 2 tsp lemon juice fresh squeezed or not from concentrate
  • 4-5 medium-large apples I used mcIntoch and fuji, or gala - should be 4 cups for smaller pans, 5-6 cups for a large 9 x 13
  • 1/2 tsp cinnamon divided
  • 1/4 cup white sugar
  • 1/2 cup brown sugar
  • 3-5 + shakes pumpkin pie spice blend
  • splash or two of water 2-4 tbs, or more if you like a more jammy fruit filling

Instructions

  • Preheat oven to 350f. Dice some (a small handful or approximately 1/4 cup) walnuts and set aside.
  • Core apples & slice evenly - medium to thin. Butter an 8x12 - 9x13 dish.
  • In a large bowl toss diced apples, 2 tbsp flour, 2 tsp fresh lemon juice 1/4 tsp cinnamon, 2-3 quick dashes of pumpkin pie spice blend and 1/4 cup white sugar together in a bowl (save other 1/4 tsp cinnamon called for above for the crisp top). Pour apples into the buttered baking dish and spread evenly.
  • In a large bowl combine melted/soften butter, brown sugar and remaining 1/4 tsp cinnamon and 2-3 dashes of pumpkin pie spice blend.
Then add 1/2 cup flour, salt and baking soda. Stir to combine. Finally, add the 1/2 cup rolled oats - do this last so the raw flour doesn't stick to the oats.
I find it easiest to add the oats/flour and sugar in parts into the soft butter with a spatula until it's sort of a creamy frosting like texture. Stir/cream this mixture until you get kind of a dry crumbly, soft sand like texture. This is good.
  • Grab that apple lined pan and add a quick splash of water - it's maybe 1/8 - 1/4 cup. Tilt the pan to distribute evenly. Do this BEFORE adding the crumble layer.
With your hands or a spatula sort of sprinkle/crumble that sandy buttery mixture evenly on top of the apple mixture. Sprinkle chopped walnuts on top and bake for 45-50 minutes. It should brown slightly on the edges.
  • After baking I broiled mine to crisp up the top a bit more - I had the pan on the middle broiler setting and I left it in for about 45 seconds total. However, when broiling always check every 10 seconds after the first 15-25 seconds in. Adjust the pan for even browning. Know your oven and adjust times accordingly to avoid some serious burning.
  • Serve a la mode. Happy fall & winter.
