Easy Bacon Cheddar Buttermilk Biscuits
These might just be the easiest biscuits you'll ever make that didn't come out of a paper tube. I find the Trader Joe's Buttermilk Pancake Mix makes a far superior biscuit to Bisquick, but either will get the job done.

Equipment
- Whisk (optional.) No special equipment required.
Ingredients
- 2 cups buttermilk pancake mix Bisquick will work, but Trader Joe's buttermilk pancake mix is the best. They key is "buttermilk".
- 3/4 cup milk room temp or not ice cold so it doesn't re-harden the butter
- 3 tablespoons butter melted or soft at room temp for easy mixing
- 1 1/2 cup cheddar cheese
- 4 strips bacon or veggie bacon fully cooked and chopped
- 1-2 cloves garlic crushed or diced
- 2-3 cracks of pepper
Instructions
- Preheat oven to 400F. Line a large baking sheet with parchment paper to prevent sticking.

- Grate cheese, prep your garlic and cook and chop your bacon. Set aside.
- Combine pancake mix, milk, and butter in large bowl. Stir or whisk until wet and sticky and their are no large powder lumps. It may still be a little lumpy.
- Stir in cheese, crushed garlic, bacon and crack of pepper and evenly distribute.
- Use a spoon or spatula to drop biscuit blobs about 2 inches around, 2+ inches apart. Yields 10-12 medium biscuits, or 9-10 large biscuits.
- Bake at 400F for 12-18 minutes until golden brown edges and browned marbled cheese is visible on the surface. Enjoy warm.
